This is one of those dishes that are perfect on a chilly day. It’s comfort food, it’s easy to make, AND best of all it falls in line with my healthier eating. Here is my basic recipe. I will add other items I have on hand (squash, diced carrots, celery, etc. just work with what you have). Eating healthier doesn’t have to be boring. 1 lb ground beef
1 clove garlic
1 large can petite diced tomatoes
½ cup water
2 cubes Chicken Bouillon (I prefer Knorr)
3 medium potatoes peeled and diced
2+ whole Jalapeños (depends how many people eat them)
1 ½ cup Fideo (I prefer Q&Q Brand)
Finely dice onion and garlic (I throw mine in an electric chopper)
In large pan or stockpot, Brown ground beef and drain
Add in onion and garlic and cook for 5 minutes
Add in petite diced tomatoes, chicken bouillon, water, and diced potatoes and jalepenos
Add Salt and pepper to taste
Bring to a boil and then cook on medium heat for about 20 minutes or until potatoes are softened.
Add Fideo and cook for 3 minutes, or until soft (different brands take different cook times be sure to read directions)
When finished, I put jalepenos to the side so I don’t risk them tearing as my children won’t eat it if they do. You can choose to dice them and leave in the dish.
